Mix parathas are a delicious and nutritious Indian dish made from wheat flour dough stuffed with a mixture of mashed potatoes, spinach, grated carrots, green peas, and aromatic spices. The dough is kneaded until soft, and the filling is sauteed with onions, chilies, and seasonings for a flavorful touch. Rolled out and cooked on a tawa with ghee or oil, these parathas are golden and crispy. They pair wonderfully with yogurt, pickle, or chutney. Easy to customize with additional vegetables or paneer, mix parathas are ideal for any meal of the day.

Ingredients:

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water (as needed)
  • 1 tablespoon oil

For the Filling:

  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped spinach
  • 1/2 cup grated carrots
  • 1/4 cup boiled and mashed green peas
  • 1/4 cup finely chopped onions
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chaat masala (optional)
  • Salt to taste
  • 2 tablespoons chopped coriander leaves
  • 1-2 green chilies, finely chopped

For Cooking:

  • Ghee or oil, for frying

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, combine wheat flour and salt.
  • Gradually add water and knead into a soft, pliable dough.
  • Add oil and knead again for 2-3 minutes until smooth. Cover and let it rest for 20 minutes.

2. Prepare the Filling:

  • Heat a pan and add 1 teaspoon oil. Add cumin seeds and let them splutter.
  • Add grated ginger, chopped onions, and green chilies. Saut until the onions turn translucent.
  • Add mashed potatoes, spinach, grated carrots, mashed green peas, and all the spices: turmeric, red chili powder, garam masala, chaat masala, and salt.
  • Mix well and cook for 3-4 minutes until the mixture is well combined and slightly dry.
  • Turn off the heat, add chopped coriander leaves, and let the filling cool completely.

3. Assemble the Paratha:

  • Divide the dough into equal-sized balls (about 6-8, depending on size).
  • Roll out one dough ball into a small circle using a rolling pin.
  • Place 2-3 tablespoons of the prepared filling in the center.
  • Gather the edges of the dough to seal the filling, pinching it at the top to close securely.
  • Flatten gently and roll it out again into a medium-thick paratha, being careful not to tear it.

4. Cook the Paratha:

  • Heat a tawa or flat pan over medium heat.
  • Place the rolled-out paratha on the hot tawa. Cook for 1-2 minutes until bubbles appear.
  • Flip the paratha and drizzle ghee or oil around the edges. Cook for another 1-2 minutes.
  • Flip again and press gently with a spatula to ensure even cooking. Cook until golden brown spots appear on both sides.

5. Serve the Mix Paratha:

  • Remove the cooked paratha and keep it warm in a clean kitchen towel.
  • Serve hot with a side of yogurt, pickle, or mint chutney. You can also enjoy it with a dollop of butter on top for extra richness.

Tips for Perfect Mixed Parathas:

  • Ensure the filling is dry to prevent tearing while rolling.
  • Rest the dough for at least 20 minutes for better elasticity.
  • Use a medium flame to cook the paratha evenly without burning.
  • Customize the filling by adding other vegetables like grated beetroot, cabbage, or paneer for extra flavor.

Enjoy these nutritious and flavorful mix parathas for a fulfilling meal.
