Gobhi Masala is a hearty cauliflower curry cooked in a spiced onion-tomato base. The florets are blanched, saut ed, and simmered in a flavorful gravy with turmeric, red chili, coriander powder, and kasuri methi. Green peas or cream can enhance the dish's richness. The masala is thick, aromatic, and garnished with coriander leaves. The dish is easy to make and versatile for pairing with roti, paratha, or rice. Perfect for everyday meals or special occasions.
Ingredients
For the Base:
- 1 medium cauliflower (gobhi), cut into medium florets
- 2 medium onions, finely chopped
- 2 medium tomatoes, pureed
- 2 green chilies, slit
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 2-3 tbsp oil
Spices:
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp kasuri methi (dried fenugreek leaves)
- Salt to taste
Optional Enhancements:
- 1/4 cup green peas (optional)
- 1/2 cup fresh cream or 1 tbsp cashew paste for creaminess (optional)
For Garnish:
- Fresh coriander leaves, chopped
Step By Step Recipe
Step 1: Prepare the Cauliflower
- Wash the cauliflower florets thoroughly.
- Blanch them in boiling salted water for 3-4 minutes to remove any impurities. Drain and set aside.
Step 2: Saut the Cauliflower
- Heat 2 tbsp oil in a large pan or kadhai.
- Lightly saut the cauliflower florets until golden. Remove and set aside.
Step 3: Prepare the Masala Base
- In the same pan, add 1 tbsp oil and heat it.
- Add cumin seeds and let them splutter.
- Add chopped onions and saut until golden brown.
- Stir in ginger, garlic, and green chilies. Cook until fragrant.
Step 4: Add Tomatoes and Spices
- Add the tomato puree to the pan. Cook until the oil separates and the mixture thickens.
- Stir in turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
Step 5: Cook the Cauliflower
- Add the saut ed cauliflower florets to the masala mixture.
- Mix gently to coat the florets with the spices.
- Add 1/2 cup water (or more for a thinner gravy) and bring it to a simmer.
Step 6: Final Touch
- Sprinkle garam masala and kasuri methi over the curry. Stir gently.
- If desired, add green peas and/or cream for added flavor and richness. Simmer for 3-5 minutes.
Step 7: Garnish and Serve
- Garnish the Gobhi Masala with fresh coriander leaves.
- Serve hot with roti, paratha, naan, or steamed rice.

- For extra flavor, you can fry the cauliflower in ghee instead of oil.
- Adjust the spice levels according to your taste.
- Avoid overcooking the cauliflower to retain its texture.
