Pitha is a beloved traditional dish from eastern India, often made for special occasions. The dough, made from rice flour and water, is stuffed with a filling of coconut, jaggery, and cardamom. Shaped into crescents, these are steamed to perfection in a banana leaf-lined steamer. The result is soft, fragrant pithas that are mildly sweet and satisfying. For added texture, chopped nuts can be included in the filling. Served warm, they pair wonderfully with tea or can be enjoyed as a standalone treat.
Ingredients
For the Dough:
- 2 cups rice flour
- 1 cup water
- A pinch of salt
For the Filling:
- 1 cup freshly grated coconut
- cup jaggery (adjust to taste)
- teaspoon cardamom powder
- A handful of chopped nuts (optional)
Tools Required:
- Steamer or idli pot
- Banana leaves or parchment paper (for lining)
Steps to Make Pitha
Step 1: Prepare the Dough
- Boil water in a pan and add a pinch of salt.
- Gradually add rice flour to the boiling water while stirring continuously to avoid lumps.
- Mix well until it forms a soft, pliable dough.
- Remove from heat and let the dough cool slightly. Once cool enough to handle, knead it to ensure smoothness. Cover with a damp cloth to prevent drying.
Step 2: Make the Coconut Filling
- Heat a pan and add grated coconut and jaggery. Stir well on low heat.
- Cook until the jaggery melts and the mixture thickens slightly.
- Add cardamom powder for flavor and mix thoroughly.
- Remove from heat and let the mixture cool. Optionally, mix in chopped nuts for added texture.
Step 3: Shape the Pitha
- Divide the rice dough into small portions and roll each into a ball.
- Flatten each ball using your palms to form a small disc.
- Place a spoonful of the coconut filling in the center of the disc.
- Carefully fold the disc over the filling to form a crescent shape. Seal the edges by pressing gently. Ensure there are no gaps.
Step 4: Prepare for Steaming
- Line a steamer with banana leaves or parchment paper to prevent sticking.
- Arrange the shaped pithas on the lined surface, leaving some space between each.
Step 5: Steam the Pithas
- Fill the steamer with water and bring it to a boil.
- Place the lined tray with pithas inside and cover the steamer with a lid.
- Steam for about 12-15 minutes or until the pithas turn firm and glossy.
Step 6: Serve the Pitha
- Once done, remove the pithas from the steamer and allow them to cool slightly.
- Serve warm as a snack or dessert, accompanied by tea or enjoyed as is.
Tips for Perfect Pithas
- Use freshly grated coconut for the best flavor.
- Adjust the sweetness by altering the amount of jaggery.
- Ensure the dough is soft but not sticky; add a bit more rice flour if needed.
- For variations, you can fry the pithas after steaming for a crispy outer layer.
Enjoy your homemade, traditional pitha.
