Start by mixing crumbled paneer, mashed potatoes, and spices. Add flour to bind the mixture and refrigerate for 30 minutes. Shape the mixture into kebabs and fry in hot oil until golden and crispy. For a healthier version, bake the kebabs. Once done, drain excess oil and serve hot with mint or tamarind chutney. These cheesy kebabs make an irresistible appetizer or party snack.

Ingredients:

  • 1 cup paneer (cottage cheese), crumbled
  • 1/2 cup boiled potatoes, mashed
  • 1/2 cup grated cheese (preferably mozzarella or cheddar)
  • 1 tablespoon cornflour
  • 1 tablespoon all-purpose flour (maida)
  • 1 small onion, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for frying
  • Lemon wedges for serving

Step 1: Prepare the Mixture

  • In a large mixing bowl, combine crumbled paneer, mashed boiled potatoes, grated cheese, and finely chopped onion. Add the ginger-garlic paste, chopped green chili, cumin powder, garam masala, red chili powder, and salt. Mix everything well until all the ingredients are evenly incorporated.
  • To bind the mixture together, add cornflour and all-purpose flour. The cornflour helps in giving the kebabs a crispy texture, while the flour ensures the mixture holds its shape. If the mixture feels too soft or sticky, add a little more flour. Once mixed, cover the bowl and refrigerate the mixture for at least 30 minutes to make it firm and easier to shape.

Step 2: Shape the Kebabs

  • After the mixture has chilled, take small portions of it and shape them into round or cylindrical kebabs. You can also form the mixture into patties if you prefer. Ensure they are compact and smooth to avoid breaking during frying.
  • You can press some extra grated cheese into the center of each kebab for a gooey, cheesy surprise when you bite into it!

Step 3: Heat the Oil

  • Heat a shallow pan or a non-stick skillet with oil over medium heat. You need enough oil to cover the base of the pan for even frying. Let the oil heat up until it shimmers but is not smoking.

Step 4: Fry the Kebabs

  • Carefully place the shaped kebabs into the hot oil. Do not overcrowd the pan. Fry the kebabs for 3-4 minutes on each side or until they turn golden brown and crispy. You may need to flip the kebabs gently using tongs or a slotted spoon to ensure they cook evenly on both sides.
  • If you prefer a healthier version, you can also bake the kebabs at 180 C (350 F) for 15-20 minutes, flipping them halfway through, until they turn golden and crispy.

  • Once fried, remove the kebabs from the oil and drain on paper towels to remove excess oil. Serve the cheese kebabs hot with mint chutney, tamarind chutney, or a fresh salad. You can also squeeze a little lemon juice on top for added flavor.
