Navratri Special Recipe Of Aloo Kadhi

Aloo Kadhi is a traditional Indian dish prepared with potatoes and a tangy yogurt-based gravy, infused with aromatic spices. It offers a harmonious balance of flavors and textures, making it a favorite among both fasting and non-fasting individuals during Navratri.

Ingredients:

- 2 medium-sized potatoes, peeled and diced

- 1 cup yogurt (preferably sour)

- 2 tablespoons chickpea flour (besan)

- 2 cups water

- 1 tablespoon ghee or vegetable oil

- 1 teaspoon cumin seeds

- 1 teaspoon ginger, grated

- 1 green chili, finely chopped

- teaspoon turmeric powder

- 1 teaspoon coriander powder

- teaspoon red chili powder (adjust to taste)

- 1 teaspoon rock salt (sendha namak, for fasting)

- 2-3 curry leaves

- Fresh coriander leaves, chopped, for garnish

Step 1. Prepare the Yogurt Mixture:

- Add chickpea flour (besan) to the yogurt and mix well to make a lump-free paste.

Step 2. Cook the Potatoes:

- Heat ghee in a pan .

- Add diced potatoes and fry until they are golden brown and cooked through.

Step 3. Prepare the Kadhi:

- Add cumin seeds and let them splutter.

- Add grated ginger and chopped green chili. Saut for a minute.

- Lower the heat and slowly pour the yogurt and besan mixture into the pan while continuously stirring to avoid lumps.

- Add water gradually.

- Stir in turmeric powder, coriander powder, red chili powder, rock salt, and curry leaves.

Step 4. Cooking Aloo Kadhi:

- Bring the kadhi to a gentle simmer and let it cook for about 8-10 minutes, stirring occasionally. This will allow the flavors to meld together and the besan to cook through.

- Once the kadhi thickens slightly and reaches a smooth consistency, add the fried potatoes. Stir gently to combine.

- Let the kadhi simmer for another 5 minutes, allowing the potatoes to absorb the flavors of the kadhi.

Step 5. Serve:

- Garnish the Aloo Kadhi with freshly chopped coriander leaves.

- Serve hot with Navratri-special Kuttu ki Roti or Samak Rice.
