To make Chicken Lollipops, start by cleaning and preparing the chicken wings, creating a lollipop shape by pushing the meat down. Marinate the wings with ginger-garlic paste, soy sauce, and spices for 30 minutes to enhance flavor. Prepare a batter with all-purpose flour, cornflour, and seasonings, and coat each lollipop evenly. Deep fry the coated chicken in hot oil until golden brown and cooked through. Drain excess oil on paper towels and garnish with spring onions and coriander. Serve hot with lemon wedges and your favorite dipping sauce

Ingredients

  • For the Chicken Lollipops:

    • 500 grams chicken wings (preferably with skin)
    • 2 tablespoons ginger-garlic paste
    • 1 tablespoon soy sauce
    • 1 tablespoon red chili powder (adjust to taste)
    • 1 tablespoon vinegar
    • 1 teaspoon black pepper powder
    • 1 teaspoon salt (to taste)
    • 1 tablespoon cornflour (for coating)
    • 1 tablespoon all-purpose flour (for coating)
    • Oil (for deep frying)
  • For the Batter:

    • cup all-purpose flour
    • cup cornflour
    • 1 teaspoon red chili powder
    • 1 teaspoon garlic powder (optional)
    • teaspoon baking powder
    • Water (as needed for a thick batter)
  • For Garnishing:

    • Spring onions (finely chopped)
    • Lemon wedges
    • Fresh coriander (for garnish)

Instructions

Step 1: Prepare the Chicken

  • Clean the Chicken: Start by cleaning the chicken wings. Pat them dry with a paper towel.
  • Prepare the Lollipops: Use a sharp knife to cut around the bone at the thinner end of the wing, pushing the meat down to create a lollipop shape. This may require some practice, but it will create a neat presentation.
  • Marinate the Chicken: In a mixing bowl, add the chicken lollipops, ginger-garlic paste, soy sauce, red chili powder, vinegar, black pepper, and salt. Mix well to ensure all pieces are coated. Let it marinate for at least 30 minutes to 1 hour. For better flavor, marinate it overnight in the refrigerator.

Step 2: Prepare the Batter

  • Make the Batter: In a separate bowl, combine all-purpose flour, cornflour, red chili powder, garlic powder, and baking powder. Gradually add water to form a thick batter that can coat the chicken. It should be of pouring consistency but thick enough to stick to the chicken.

Step 3: Coat the Chicken

  • Coat the Chicken: After marinating, take each chicken lollipop and dip it into the batter, ensuring it's well-coated. Shake off any excess batter and place the coated chicken on a plate.

Step 4: Fry the Chicken Lollipops

  • Heat Oil: In a deep frying pan, heat enough oil for deep frying over medium heat. Test if the oil is hot enough by dropping a small amount of batter; it should sizzle and rise to the surface.
  • Fry the Chicken: Carefully add the chicken lollipops to the hot oil in batches. Do not overcrowd the pan. Fry until they are golden brown and cooked through, about 7-10 minutes. Make sure to turn them occasionally for even cooking.
  • Drain Excess Oil: Once fried, remove the lollipops and place them on paper towels to absorb any excess oil.

Step 5: Serve

  • Garnish and Serve: Transfer the Chicken Lollipops to a serving platter. Garnish with chopped spring onions and coriander. Serve hot with lemon wedges and your favorite dipping sauce, such as sweet chili sauce or schezwan sauce.

Tips:

  • Cooking Time: Adjust frying time based on the size of the chicken wings and ensure they are fully cooked (internal temperature should reach 165 F or 75 C).
  • Serving Suggestion: These Chicken Lollipops can be served as an appetizer or a party snack, perfect for gatherings and celebrations.
