Quick Mango Shahi Tukda Recipe

Ingredients:

For Rabri (Thickened Milk):

- 1 liter full-fat milk

- 1/2 cup sugar

- 1/2 teaspoon cardamom powder

- Saffron strands (optional)

- Chopped nuts (almonds, pistachios) for garnish

For Mango Puree:

- 2 ripe mangoes, peeled and chopped

- 2 tablespoons sugar (adjust according to sweetness of mangoes)

- A squeeze of lemon juice (optional)

Instructions:

Step 1.Prepare Rabri (Thickened Milk):

- In a bottomed pan, pour the milk and boil it.

- Continue simmering until the milk reduces to about half its original volume and thickens. This process may take 30-40 minutes.

Step 2. Prepare Mango Puree:

- In a blender, combine chopped mangoes, sugar, and lemon juice (if using). Blend until smooth to form a thick mango puree. Set aside.

Step 3. Fry the Bread (Tukda):

- Cut the bread slices into desired shapes, such as squares or triangles.

- Heat ghee or oil in a frying pan over medium heat.

- Fry the bread slices until golden brown and crispy on both sides. Remove from the pan and place them on a paper towel to absorb excess oil.

Step 4. Assemble Mango Shahi Tukda:

- Place the fried bread slices (tukda) on a serving plate.

- Pour a generous amount of rabri over each bread slice, ensuring it is well coated.

- Drizzle mango puree on top of the rabri layer, spreading it evenly.
