To make Alia Bhatt's zucchini sabji, saute cumin seeds, onions, and green chili in oil, then add ginger-garlic paste and chopped tomatoes. Ingredients:
- 2 medium zucchinis, diced
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 tomato, finely chopped
- 1 green chili, slit (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
Instructions:
1.Prepare the Ingredients:
- Wash and dice the zucchinis.
- Finely chop the onion and tomato.
2. Cook the Sabji:
- Heat oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add the chopped onion and green chili (if using) and saut until the onion turns golden brown
- Add the ginger-garlic paste and saut for another minute until the raw smell disappears.
- Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the masala.
- Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a minute.
- Add the diced zucchinis and mix everything together. Cover the pan and cook on low heat for 10-15 minutes or until the zucchinis are tender, stirring occasionally to prevent sticking.
3. Finish and Serve:
- Once the zucchinis are cooked, garnish with fresh coriander leaves.
- Serve hot with roti, paratha, or rice.
