To make Alia Bhatt's zucchini sabji, saute cumin seeds, onions, and green chili in oil, then add ginger-garlic paste and chopped tomatoes. Mix in spices [turmeric, coriander, cumin, red chili powder and salt] then add diced zucchinis and cook until tender. Garnish with fresh coriander leaves. Serve hot with roti, paratha, or rice.

Ingredients:

  • 2 medium zucchinis, diced
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 1 tomato, finely chopped
  • 1 green chili, slit (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

1.Prepare the Ingredients:

  • Wash and dice the zucchinis.
  • Finely chop the onion and tomato.

2. Cook the Sabji:

  • Heat oil in a pan over medium heat.
  • Add cumin seeds and let them splutter.
  • Add the chopped onion and green chili (if using) and saut until the onion turns golden brown
  • Add the ginger-garlic paste and saut for another minute until the raw smell disappears.
  • Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the masala.
  • Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a minute.
  • Add the diced zucchinis and mix everything together. Cover the pan and cook on low heat for 10-15 minutes or until the zucchinis are tender, stirring occasionally to prevent sticking.

3. Finish and Serve:

  • Once the zucchinis are cooked, garnish with fresh coriander leaves.
  • Serve hot with roti, paratha, or rice.
