In a large pan, heat the oil on medium heat. Add mustard seeds and let them splutter. Then, add urad dal, chana dal, peanuts, and fry until golden brown.

Add the slit green chilies, dried red chili, curry leaves, and a pinch of hing. Sauté for a few seconds until the chilies and curry leaves turn crisp.

Lower the heat and add turmeric powder. Stir quickly to mix it with the tempering ingredients. Be careful not to burn the turmeric.

Add the cooked rice to the pan and gently mix everything together. Make sure the rice is well coated with the tempering and turmeric. Add salt to taste.

Turn off the heat and squeeze fresh lemon juice over the rice. Mix well. Garnish with fresh coriander leaves and serve.
