How to Make Malabar Chicken Curry in 8 Steps.

Gather Ingredients, collect 500g chicken, 2 tbsp coconut oil, 1 onion (chopped), 2 tomatoes, 1 cup grated coconut, ginger-garlic paste, and spices like turmeric, coriander, and garam masala.
Sauté Onions and Spices, heat coconut oil, sauté onions until golden, add ginger-garlic paste, turmeric, coriander, and cook for a minute.
Add Tomatoes, add chopped tomatoes and cook until soft and mixed with the spices.
Cook Chicken, add chicken pieces, stir well, and cook until browned and partly done.
Make Coconut Paste, blend coconut with water into a paste, then add it to the chicken.
Simmer Curry, pour 1 cup water, bring to a boil, then simmer for 20-25 minutes until the chicken is tender.
Add Garam Masala, stir in garam masala and cook for another 2 minutes.
Serve Hot, garnish with cilantro and serve with rice or parathas.
