In a large pan, heat the oil or ghee over medium heat. add cumin seeds and let them sizzle for a few seconds.
Add the chopped onions and saute until they turn golden brown, then, stir in the ginger garlic paste and sauté for another minute.
Add the tomato puree, turmeric powder, coriander powder, and salt. cook until the oil starts to separate from the mixture.
Add the mixed vegetables and stir well to coat them with the spice mixture. cook for a few minutes.
Lower the heat and add the yogurt, stirring continuously to prevent curdling. cook until the vegetables are tender and the korma thickens.
Finally, sprinkle garam masala, mix well, and garnish with fresh coriander leaves and cashews or almonds if desired. serve hot with rice or naan.
