Here’s a simple recipe to make Mixed Vegetable Soup at home.

Heat the olive oil or butter in a large pot over medium heat, add the chopped onion and sauté until it becomes translucent.
Add the minced garlic and grated ginger, sauté for another minute until fragrant.
Add the mixed vegetables to the pot and stir for a couple of minutes to combine.
Pour in the vegetable or chicken broth, add salt, pepper, and dried herbs. bring the soup to a boil, then reduce the heat and let it simmer for about 10-15 minutes until the vegetables are tender.
Once done, you can blend the soup for a smooth texture or leave it chunky, based on your preference. adjust seasoning if needed, and add a splash of lemon juice for brightness.
Serve hot, garnished with fresh coriander leaves. enjoy your nutritious mixed vegetable soup.
