In a large bowl, combine the oats, chopped nuts, and chia seeds or flaxseeds if using.
Microwave the nut butter and honey or maple syrup in 20-second intervals, stirring until warm and well combined.
Combine the warm nut butter and honey with the oats and nuts, add vanilla if desired, and mix until evenly coated; adjust with extra nut butter or honey if needed.
Gently fold in the mini chocolate chips if desired.
Shape the mixture into 1-inch balls and place them on a parchment-lined baking sheet or plate.
Refrigerate the energy balls for at least 30 minutes to help them firm up.
Store the energy balls in an airtight container in the refrigerator for up to 1 week or freeze for longer.
