This technique can be used to make Bitter Gourd without overpowering bitterness:
Preparation: Slice bitter gourd and soak in salted water for 30 mins to reduce bitterness.
Blanching: Boil sliced bitter gourd for 2-3 mins, then drain and rinse under cold water.
Tempering: Heat oil, add mustard seeds, cumin seeds, and curry leaves. Sauté until seeds crackle.
Aromatics: Add finely chopped onions, ginger-garlic paste, and green chilies. Sauté until onions are golden brown.
Spices: Mix turmeric, coriander powder, cumin powder, and chili powder in a bowl. Add to the pan and cook for 1 min.
Cooking: Add blanched bitter gourd, salt, and a pinch of sugar. Stir well and cook covered on low heat for 15-20 mins.
Finishing: Garnish with fresh cilantro and a squeeze of lemon juice before serving.
