Prepare the Vegetables, heat oil in a pan or wok. Sauté the minced garlic and chopped onions until they turn golden.

Cook the Mushrooms, add sliced mushrooms to the pan and cook until they are soft and golden brown.

Add Bell Peppers, toss in the chopped bell peppers and stir-fry for 2-3 minutes, keeping the veggies slightly crunchy.

Season with Soy Sauce, pour in the soy sauce and stir well to coat the vegetables evenly. Add salt and pepper to taste.

Add Rice, mix in the cooked rice and stir-fry on high heat for 2-3 minutes, ensuring everything is well combined.

Garnish, with chopped spring onions and serve hot. Enjoy your mushroom fried rice.
