In a large bowl, mix mashed potatoes with cheese, bacon, green onions, sour cream, garlic powder, salt, and pepper until well combined.

Scoop and roll the potato mixture into golf ball-sized balls, repeating until all are formed.

Create a breading station with beaten eggs and breadcrumbs, then dip each potato ball in egg and roll in breadcrumbs until coated.

Heat oil in a skillet and fry the potato balls in batches for 3-4 minutes per side until golden brown, then drain on paper towels.

Enjoy them warm! Serve with additional sour cream or your favorite dipping sauce.
