Grind the Ingredients, in a blender, combine grated fresh coconut, roasted peanuts, green chilies, and cumin seeds. Add a little water to get a smooth paste.
Add Yogurt, once the coconut mixture is smooth, add yogurt to the blender and pulse again for a few seconds. this adds a slight tanginess to the chutney.
Season with Salt, transfer the chutney into a bowl and add rock salt to taste. stir well to combine the flavors.
Prepare the Tempering, in a small pan, heat 1 tsp ghee. add mustard seeds and curry leaves. allow the mustard seeds to splutter and the curry leaves to crisp up.
Pour the Tempering, pour the hot tempering over the chutney to add extra flavor and aroma.
Serve, your vrat-friendly coconut chutney is ready! Serve it alongside vrat ki idli, dosa, or any fasting dish.
