Gather Ingredients, you’ll need 1 medium-sized lauki, 2 tablespoons oil, 1 teaspoon cumin seeds, 1/2 teaspoon turmeric, 1 teaspoon coriander powder, 1/2 teaspoon red chili powder, salt to taste, and chopped cilantro for garnish.
Peel and Chop the Lauki, peel the lauki, remove the seeds if they are hard, and cut it into small cubes.
Heat Oil in a Pan, in a pan, heat the oil and add cumin seeds. Let them splutter for a few seconds until aromatic.
Add Spices, add turmeric, coriander powder, and red chili powder. Stir well to release the flavors, but be careful not to burn the spices.
Add the chopped lauki, to the pan and stir it to coat the vegetable with the spices.
Cook Covered, the pan and cook the lauki on low-medium heat for about 10-12 minutes, stirring occasionally until the lauki becomes soft.
Adjust Seasoning, once the lauki is cooked, check for seasoning and add salt as needed. Stir well.
Garnish and Serve, with chopped cilantro and serve your lauki ki sabzi hot with roti or rice.
