Marinate the Chicken, in a bowl, mix the chicken pieces with yogurt, red chili powder, turmeric, and a pinch of salt. let it marinate for 30 minutes to an hour. this tenderizes the chicken and infuses flavor.
Prepare the Masala Base, heat 2 tablespoons of oil in a deep pan. add cumin seeds, bay leaf, cardamom, and cloves. sauté until they release their aroma. then add the sliced onions and cook until golden brown.
Add Ginger Garlic Paste, stir in the ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears. add the chopped tomatoes and cook until they soften and blend into the mixture, forming a thick masala.
Cook the Chicken, add the marinated chicken to the masala and stir well. cook on medium heat, letting the chicken absorb the masala. cover and simmer for about 15-20 minutes, stirring occasionally.
Add Spices, once the chicken is cooked through, add garam masala, and adjust the salt. cook for another 5 minutes until the flavors are well combined and the chicken is tender.
Garnish and Serve, turn off the heat and garnish with fresh coriander leaves. serve your lucknowi chicken masala hot with naan, roti, or rice.
