Preheat Oven, Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
Mix Dry Ingredients, In a bowl, combine 1 cup rolled oats, 1 cup whole wheat flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon cinnamon, and a pinch of salt.
Combine Wet Ingredients, In another bowl, whisk together 1/2 cup applesauce, 1/3 cup honey or maple syrup, 1/4 cup melted coconut oil, 1 egg, and 1 teaspoon vanilla extract.
Add Apples, Fold in 1 cup of finely chopped apples into the wet ingredients.
Mix Together, Gently mix the wet and dry ingredients until just combined.
Fill Muffin Tin, Spoon the batter into the muffin tin, filling each cup about 3/4 full.
Bake, for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool and enjoy.
