How to make vegetable Hakka noodles in 8 simple steps.

Boil Noodles, cook Hakka noodles in boiling water with salt and a little oil until al dente. Drain and rinse with cold water, then toss with oil to prevent sticking.
Prepare Veggies, thinly slice bell peppers, carrots, cabbage, and beans. Chop garlic, green chilies, and spring onions.
Heat Oil, in a large pan or wok, heat oil on high heat. Add chopped garlic, ginger, and green chilies. Sauté for a minute until fragrant.
Stir Fry Vegetables, Add the sliced vegetables and stir-fry on high heat for 2-3 minutes. Keep them crunchy and don’t overcook.
Add Sauces, pour in soy sauce, vinegar, and chili sauce. Stir well to coat the veggies evenly.
Toss Noodles, add the cooked noodles to the pan and toss everything together to combine.
Season, add salt, pepper, and a pinch of sugar. Stir everything well to mix.
Garnish and Serve, with spring onions and serve hot.
