Heat Milk, Warm 1 gallon of milk to 85°F, 29°C.

Add Acid, Stir in 1/4 cup lemon juice or vinegar.

Add Rennet, Mix in 1/4 teaspoon rennet dissolved in 1/4 cup water.

Cut Curds, Cut the curds into small cubes, let sit for 5 minutes.

Cook Curds, Heat curds to 105°F, 40°C while stirring gently.

Knead Cheese, Knead the curds in hot water 160°F/70°C until smooth.

Drain Whey, Pour curds into a colander lined with cheesecloth.

Shape Cheese, Form into balls or logs and cool in ice water.
