Soak the Sabudana, rinse the sabudana under running water until clear. soak them in enough water for about 4-6 hours or overnight until they become soft and fluffy.
Prepare the Mixture, in a mixing bowl, combine the soaked sabudana, boiled and mashed potato, chopped green chilies, cumin seeds, chopped coriander leaves, and sendha namak. Mix well until all ingredients are evenly combined.
Shape the Tikkis, take a small portion of the mixture and shape it into a flat round patty or tikki. repeat until all the mixture is used.
Heat the Oil, in a non-stick frying pan, heat enough oil over medium heat. You can use ghee for a richer taste.
Fry the Tikkis, once the oil is hot, gently place the prepared tikkis in the pan. fry them until they are golden brown and crispy on both sides, about 3-4 minutes per side.
Serve, once cooked, remove the tikkis from the pan and place them on a paper towel to absorb excess oil. serve hot with green chutney or yogurt.
