Marinate the tofu, In a bowl, mix vegan yogurt with garam masala, cumin, and coriander powder. Coat tofu or vegetables with the mixture and set aside for 30 minutes.
Grill or roast the tofu, Roast the marinated tofu or veggies in the oven for about 20 minutes at 180°C (350°F), or grill until slightly charred.
Prepare the curry base, Sauté chopped onions until golden brown, add the pureed tomatoes, and cook for a few minutes. Add more spices like turmeric and chili powder for extra flavor.
Simmer in coconut milk, Add coconut milk to the tomato-onion mixture and simmer for 5-7 minutes to create a creamy sauce.
Combine and serve, Stir in the roasted tofu/vegetables, and simmer for another 5 minutes. Garnish with fresh cilantro and serve hot with rice or naan.
