Boil Arbi, Boil arbi until tender, then peel and slice into pieces.

Heat Oil, Heat mustard oil in a pan until it starts to smoke, then reduce the heat.

Add Mustard Seeds, Add mustard seeds, letting them splutter.

Sauté Spices, Add cumin seeds, asafoetida, turmeric, and red chili powder, and sauté briefly.

Cook Arbi, Add the sliced arbi to the pan, stirring to coat with the spices.

Add Flavors, Mix in salt, coriander powder, and a dash of amchur.

Simmer, Cover and cook on low heat for 5-7 minutes, stirring occasionally.

Garnish & Serve, Garnish with fresh coriander leaves and serve hot with roti or rice.
