Prepare the Chickpea Mash, in a large bowl, mash the boiled chickpeas lightly using a fork or a potato masher. You can leave some chickpeas whole for texture.
Add the Sprouts, mix the sprouts with the mashed chickpeas. Use any sprouts of your choice, like mung bean sprouts or alfalfa.
Mix in Vegetables, add the chopped cucumber, tomato, and red onion to the bowl. These veggies add crunch and freshness to the salad.
Season the Mixture, drizzle olive oil, sprinkle cumin powder, black pepper, and salt to the chickpea and sprouts mixture. Add lemon juice to enhance the flavor.
Incorporate Yogurt, stir in the yogurt to bind everything together. This acts as a healthy and creamy dressing.
Toast the Bread, lightly toast the whole-grain bread slices until they are golden brown and slightly crispy.
Assemble the Sandwich, place fresh lettuce or spinach leaves on the bread slices. Spread a generous amount of the chickpea and sprouts salad on top.
