Here's a simple recipe for Kerala-style dal in seven steps.

Rinse 1 cup toor dal, cook with 2-3 cups water and 1/2 tsp turmeric in a pressure cooker for 3-4 whistles until soft.

Heat 2 tbsp oil or ghee, splutter 1 tsp mustard seeds, then add 1 tsp cumin seeds, 1/2 tsp fenugreek seeds, and curry leaves, and sauté for a minute.

Sauté 1 finely chopped onion and 2-3 slit green chilies until the onion is translucent.

Cook 1 chopped tomato until soft, then add 1/2 tsp black pepper and salt, and mix well.

Mix the cooked dal into the pan, adjust with water if needed, and simmer for 5-10 minutes to blend flavors.

For added flavor, you can add 1 tbsp grated coconut and cook for another 2-3 minutes.

Garnish with coriander leaves and serve hot with rice or Indian bread.
