Prepare the Bhindi, Wash, dry, and chop bhindi into 1-2 inch pieces.

Heat Oil, In a pan, heat 2-3 tablespoons of oil and sauté the chopped bhindi until slightly crispy. Set aside.

Cook Onions, In the same pan, add more oil if needed, and sauté sliced onions until golden brown.

Add Tomatoes and Spices, Add chopped tomatoes, turmeric, coriander powder, red chili powder, and salt. Cook until the tomatoes soften.

Combine Bhindi, Add the sautéed bhindi to the tomato-onion mixture, mix well, and cook for 5-7 minutes on low heat.

Garnish, Sprinkle garam masala and fresh coriander leaves, mixing gently.

Serve hot with roti, naan, or rice.
