Prepare the Base, dry roast whole spices like coriander seeds and dry red chilies, then grind them into a coarse powder. Set aside for later.

Sauté Veggies, heat oil in a pan and sauté diced onions, bell peppers, and tomatoes. Cook until soft and fragrant.

Make the Gravy, add ginger-garlic paste to the pan and sauté. Add the ground spice mix along with tomato puree, salt, and garam masala. Let it simmer until the gravy thickens.

Add Paneer, cube the paneer and add it to the simmering gravy. Stir gently to coat the paneer in the flavorful sauce.

Finish and Garnish, let the paneer cook for a few minutes, then garnish with fresh coriander leaves and cream. Serve hot with naan or rice.
