Cook the Dal: Rinse 1 cup of toor dal and cook it in a pressure cooker with 2 cups of water, a pinch of turmeric, and a little oil until soft.
Combine Dal and Tempering, Add the cooked dal to the pan with tempering, mix well, and add salt to taste. Simmer for 5 minutes, adding water if needed for consistency.
Prepare the Tempering, In a pan, heat ghee, add mustard seeds, cumin seeds, a pinch of asafoetida, and curry leaves. Allow the seeds to splutter.
Cook the Rice, While the dal simmers, cook 1 cup of rice separately until fluffy.
Serve, the warm, spiced dal over the cooked rice, garnishing with coriander leaves.
