Prepare the Dough, in a mixing bowl, combine ragi flour, wheat flour, grated carrot, green chilies, ginger, coriander leaves, ajwain, and salt. add water gradually to knead a soft dough.
Rest the Dough,
cover the dough with a cloth and let it rest for 10-15 minutes to ensure the ingredients blend well.
Roll the Parathas, divide the dough into small balls, roll each ball into a round paratha using a rolling pin, and dust with flour if needed to prevent sticking.
Cook the Parathas, heat a tawa, place the rolled paratha on it, and cook for 1-2 minutes on each side, applying oil or ghee until golden brown and crispy on both sides.
Serve the hot Ragi Gajar Parathas with yogurt, chutney, or pickle for a healthy and delicious meal.
