Ingredients:

  • 250g paneer (cottage cheese), cubed
  • 2 tablespoons ghee or oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tomatoes, pureed
  • 1/4 cup cashew nuts, soaked in warm water
  • 1/2 cup heavy cream
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  • Prepare the Cashew Paste:
  • . Drain the soaked cashew nuts and blend them into a smooth paste with a little water.

2. Cook the Paneer:

  • Heat 1 tablespoon of ghee or oil in a pan.
  • Add the paneer cubes and saut until they are golden brown. Remove and set aside.

3. Prepare the Gravy:

  • In the same pan, add the remaining ghee or oil.
  • Add the finely chopped onions and saut until they turn golden brown.
  • Add the minced garlic and grated ginger, saut for another minute.
  • Add the tomato puree and cook until the oil separates from the mixture.
  • Add turmeric powder, coriander powder, cumin powder, garam masala, red chili powder, and salt. Cook for 2-3 minutes.
  • Stir in the cashew paste and cook for another 2 minutes.
  • Add the heavy cream and mix well, cooking for an additional 2-3 minutes.
  • Add the saut ed paneer cubes and simmer for 5-7 minutes, allowing the paneer to absorb the flavors.

4. Garnish and Serve:

  • Garnish with chopped cilantro.
  • Serve hot with naan.
