Savaan Special usually refers to dishes made during Sawan (Shravan), a holy month in the Hindu calendar. Here's a simple recipe for Savaan Special Sabudana Khichdi .
1. Ingredient
- 1 cup sabudana (tapioca pearls)
- 1 medium potato, peeled and cubed
- 1/4 cup roasted peanuts, coarsely ground
- 1-2 green chilies, chopped
- 1 tsp cumin seeds
- 1-2 tbsp ghee or oil
- Salt to taste
- Fresh coriander leaves, chopped
- Lemon juice (optional)
2. Instructions
- Soak Sabudana: Rinse the sabudana under running water until the water runs clear. Soak in water just enough to cover the sabudana for about 4-5 hours or overnight. Drain any excess water before cooking.
- Prepare Potatoes: Heat ghee or oil in a pan. Add cumin seeds and let them splutter. Add the cubed potatoes and saut until they are golden and cooked through.
- Cook Sabudana: Add the soaked sabudana to the pan with potatoes. Stir well to combine.
- Add Peanuts and Chilies: Add the roasted peanuts, green chilies, and salt. Mix everything well and cook on low heat for about 5-7 minutes, stirring occasionally to prevent sticking.
- Finish and Serve: Once the sabudana pearls become translucent and are cooked, remove from heat. Garnish with fresh coriander leaves and a squeeze of lemon juice if desired. Serve hot.
