Curd rice, a South Indian favorite, blends cooked rice with creamy yogurt for a cooling, comforting dish, ideal for hot days or post-meal relaxation. Here are easy steps to prepare curd rice, a popular South Indian dish:

1.Ingredients

- 1 cup rice

- 1.5 cups yogurt (curd)

- 1/4 cup milk

- Salt to taste

- For tempering:

- 1 tablespoon cooking oil

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 2-3 green chilies, chopped

- A few curry leaves

- 1/2 inch piece of ginger, finely chopped

- 2 tablespoons chopped coriander leaves for garnish

2.Instructions

Step1-Cooking Rice

Cook the rice until it's soft and slightly mushy. You can cook it in a rice cooker or on the stove. Once cooked, let it cool down a bit.

Step2-Preparing Yogurt Mixture

In a large bowl, whisk together yogurt and milk (if using) until smooth. Add salt to taste.

Step3-Mixing Rice and Yogurt

Once the rice has cooled down to a warm temperature, add it to the bowl of yogurt mixture. Mix well to combine. The rice will absorb the yogurt and become creamy.

Step4-Tempering

Heat oil in a small pan over medium heat.

Add mustard seeds and let them splutter.

Add cumin seeds and let them crackle.

Add chopped green chilies, curry leaves, and ginger (if using). Saut for a minute until fragrant.

Step5-Combining Everything

Pour the tempering mixture over the rice and yogurt mixture. Mix well to distribute the tempering evenly throughout the curd rice.

Step6-Garnish

Garnish with chopped coriander leaves.

Step 7-Chilling

If you prefer, refrigerate the curd rice for 30 minutes to 1 hour before serving. It tastes great chilled.

Step8-Serving

Serve curd rice as is or with a side of pickle or papad (papadum).

3.Tips

- Adjust the amount of yogurt according to your preference for creaminess.

- You can also add finely chopped vegetables like carrots, cucumber, or pomegranate seeds for added texture and flavor.
