- 3-4 kaffir lime leaves (or zest of 1 lime)

- 1-inch piece of galangal (or ginger), sliced

- 4-5 garlic cloves

- 1 shallot, chopped

- 1 teaspoon shrimp paste (optional)

- 1 teaspoon coriander seeds

- 1 teaspoon cumin seeds

- 1 tablespoon vegetable oil

For the Curry:

- 1 tablespoon vegetable oil

- 400ml coconut milk

- 300g chicken (or tofu), sliced

- 1 cup mixed vegetables (like bell peppers, zucchini, and eggplant)

- 2 tablespoons fish sauce (or soy sauce for vegetarian)

- 1 tablespoon palm sugar (or brown sugar)

- Fresh basil leaves, for garnish
