The dish is coated in a spicy and tangy sauce made from gochujang, soy sauce, sesame oil, rice vinegar, and honey. Garnished with sesame seeds and fresh herbs, this dish offers a flavorful and satisfying meal.

Ingredients:

For the Noodles:

  • 200 grams of noodles (ramen, soba, or any preferred type)
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup cabbage, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped
  • 1 cup mushrooms, sliced (optional)

For the Gochujang Sauce:

  • 3 tablespoons gochujang (Korean red chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water (to adjust consistency if needed)

For Garnish:

  • Sesame seeds
  • Fresh cilantro or parsley
  • Lime wedges

Instructions:

1. Cook the Noodles:

  • Cook the noodles according to the package instructions.
  • Drain and rinse under cold water to stop the cooking process. Set aside.

2. Prepare the Sauce:

  • In a small bowl, whisk together the gochujang, soy sauce, sesame oil, rice vinegar, honey or maple syrup, and water until well combined.
  • Adjust the consistency with more water if needed. Set aside.

3. Stir-Fry the Vegetables:

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and grated ginger, and saut for about 30 seconds until fragrant.
  • Add the sliced onion, bell pepper, carrot, cabbage, and mushrooms (if using).
  • Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

4. Combine Noodles and Sauce:

  • Add the cooked noodles to the skillet with the vegetables. Pour the gochujang sauce over the noodles and vegetables.
  • Toss everything together to ensure the noodles and vegetables are evenly coated with the sauce.
  • Cook for an additional 2-3 minutes until everything is heated through.

5. Serve:

  • Divide the gochujang noodles into serving bowls.
  • Garnish with sesame seeds, fresh cilantro or parsley, and a squeeze of lime juice.

6. Optional Additions:

  • For extra protein, add tofu, chicken, shrimp, or beef. Cook these separately and mix them in with the noodles and vegetables.
