Ingredients:

- 1/2 cup ragi flour

- 2 cups water

- 1 tablespoon olive oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 carrot, diced

- 1 potato, diced

- 1 tomato, diced

- 4 cups vegetable broth

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- Salt and pepper to taste

- Fresh cilantro for garnish

Instructions:

Step 1. In a small bowl, mix the ragi flour with 1 cup of water until smooth. Set aside.

Step 2. In a large pot, heat the olive oil . Add the chopped onion and garlic, and saut until translucent and fragrant, about 3-4 minutes.

Step 3. Add the diced carrot, potato, and tomato to the pot, and cook for another 5 minutes, stirring occasionally.

Step 4. Pour in the vegetable broth and remaining 1 cup of water, and bring the mixture to a gentle boil.

Step 5. Gradually whisk in the ragi-water mixture, stirring constantly to prevent lumps from forming.

Step 6. Add the cumin powder, coriander powder, turmeric powder, salt, and pepper to the soup, and stir well to combine.

Step 7. Reduce the heat to low, cover the pot, and simmer the soup for 15-20 minutes, or until the vegetables are tender and the soup has thickened to your desired consistency.
