Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 cup unsalted peanuts
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions:

step 1- Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, rice vinegar, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for at least 15-20 minutes.

step 2- Prepare the Sauce: In a separate bowl, whisk together hoisin sauce, soy sauce, and a tablespoon of water. Set aside.

step 3- Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and cook until they are browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
