To make garlic paratha, prepare a soft dough with whole wheat flour and salt, letting it rest for 20 minutes. Mix a garlic filling with minced garlic, coriander, chilies, and spices. Divide the dough into balls, roll each one, add filling, and seal. Flatten and roll again, then cook on a hot skillet with ghee until golden brown on both sides. Serve the crispy garlic parathas hot with yogurt, pickles, or curry for a flavorful meal. Adjust the garlic and spices to taste for added flavor.

Ingredients:

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • Water, as needed to knead
  • 1 tsp oil (optional, for softness)

For the Garlic Filling:

  • 6-8 cloves garlic, finely minced or grated
  • 1/4 cup fresh coriander leaves, chopped
  • 1-2 green chilies, finely chopped (optional, for spice)
  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder (optional)
  • Salt to taste
  • 1-2 tbsp ghee or oil (for cooking)

Instructions:

Step 1: Prepare the Dough

  • In a mixing bowl, add whole wheat flour and salt. Gradually add water and knead into a smooth, soft dough.
  • Add 1 tsp oil, if desired, to make the dough softer. Knead for another 2-3 minutes.
  • Cover the dough with a damp cloth and let it rest for 15-20 minutes.

  • Gently flatten it with your fingers to ensure the filling is evenly distributed.
  • Roll out the paratha again into a larger circle, about 6-8 inches in diameter, being careful not to let the filling spill out.

Step 6: Cook the Paratha

  • Heat a tawa or flat skillet over medium-high heat.
  • Place the rolled paratha on the hot skillet. Cook until bubbles start to form, about 1-2 minutes.
  • Flip the paratha and apply a small amount of ghee or oil on the surface. Cook until golden brown spots appear.
  • Flip again, applying oil or ghee on the other side, and cook until both sides are golden and crisp.
