Do you know for a fact that adding peanut butter to cookies creates an amazing soft consistency with a delicate and velvety crumb? You can make them days in advance for instant gratification, anytime, and they're simple and easy to make! The most difficult part is having the patience to let them set up after they're out of the oven.

To start with, you can use creamy peanut butter, or if you like, you can definitely use chunky peanut butter instead. However, if you're using natural peanut butter, make sure to give it a good mix before adding it.

You can use either light or dark brown sugar in this peanut butter cookie recipe, but let us tell you that dark brown will impart a slightly more caramel-like flavor.

Preparation:

STEP 1-Set the oven temperature to 350 degrees Fahrenheit. In a large bowl, sift the flour and baking powder together and whisk to mix.

STEP 2-Cream butter using a stand mixer with a paddle attachment, together with granulated sugar and brown sugar. Stir in the peanut butter until well combined.

STEP 3-After adding the vanilla essence and egg that have come to room temperature, scrape down the bowl and stir again.

STEP 4-Beat in the flour mixture on low speed until barely combined.

STEP 5-Place the cookie dough on a baking sheet covered with parchment paper after rolling it into one-inch balls.

STEP 6-Using a fork, flatten the cookie dough balls into crisscross shapes. Give the cookies about 8 minutes to bake. Let cookies cool fully on the baking sheet; they must firm up before transferring.

STEP 7-The cookies should be baked until the edges are just beginning to turn color, which is almost done. When you take them out of the oven, the residual heat from within will help them set up and continue baking.

STEP 8-Make sure you measure your flour properly! The most frequent error is to overmix the flour in the recipe.

STEP 9-After taking them out of the oven, the cookies should be allowed to cool on the baking pans for a bit before moving them to a wire rack. Once cooled, the cookies will become manageable and taste fairly good.
