Varanasi, known for its rich culinary traditions, offers a delightful twist on the popular street food, tomato chaat. Here's a recipe to recreate this famous dish.

Ingredients:

  • 4 large ripe tomatoes
  • 1 cup boiled chickpeas (chana)
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (adjust to taste)
  • 1/4 cup finely chopped coriander leaves (cilantro)
  • 1/4 cup tamarind chutney
  • 1/4 cup mint-coriander chutney (optional, for added flavor)
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • Sev (crunchy chickpea noodles) for garnish
  • Fresh pomegranate seeds for garnish (optional)
  • Fresh coriander leaves for garnish

Instructions:

1. Prepare the Tomatoes:

  • Wash the tomatoes thoroughly. Cut them into medium-sized chunks or wedges.

2. Assemble the Chaat:

  • In a large mixing bowl, add the tomato chunks.
  • Add boiled chickpeas, finely chopped onion, green chili, and coriander leaves.

3. Season and Dress:

  • Sprinkle roasted cumin powder, chaat masala, and salt over the tomato mixture.
  • Add tamarind chutney and mint-coriander chutney (if using) according to taste.

4. Mix Well:
