Thepla is a delicious and popular Gujarati flatbread made from whole wheat flour, spices, and often vegetables. It's a versatile dish that can be enjoyed for breakfast, lunch, or dinner. Here's a simple recipe to make traditional thepla:
1. Ingredients
- 1 cup whole wheat flour
- 1/2 cup besan (gram flour) (optional but adds flavor)
- 1/2 cup finely chopped fenugreek leaves (methi) or other greens like spinach or cilantro
- 1 small onion, finely chopped (optional)
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 tbsp ginger-garlic paste (optional)
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala (optional)
- 1/2 tsp chili powder (adjust to taste)
- 1/2 tsp sugar
- Salt to taste
- 2 tbsp yogurt (optional, for softness)
- 2 tbsp oil or ghee (for the dough)
- Oil or ghee for cooking
2. Instructions
Step 1- Prepare the Dough:
- In a large bowl, combine the whole wheat flour, besan (if using), and salt.
- Add the finely chopped fenugreek leaves, onion, green chilies, and ginger-garlic paste.
- Mix in the turmeric powder, cumin seeds, mustard seeds, coriander powder, garam masala (if using), chili powder, and sugar.
- Add yogurt if you're using it, and then slowly add water a little at a time to form a soft, pliable dough. The dough should be smooth and not too sticky.
- Knead the dough for a few minutes until it becomes soft and elastic.
- Cover the dough with a damp cloth and let it rest for at least 15 minutes.
Step 2- Roll Out the Theplas:
- Divide the dough into equal-sized balls (about the size of a golf ball).
- Lightly flour your rolling surface and rolling pin.
- Flatten each dough ball with your hands, then roll it out into a thin circle, about 6-8 inches in diameter. If the dough sticks, you can use a little flour to dust the surface.
Step 3- Cook the Theplas:
- Heat a tava (griddle) or non-stick pan over medium heat.
- Once hot, place the rolled-out thepla on the pan. Cook for about 30 seconds or until small bubbles start to form.
- Flip the thepla and brush a little oil or ghee on the surface. Cook for another 30 seconds or until golden brown spots appear.
- Flip again and press gently with a spatula to ensure even cooking. Cook for another 30 seconds to 1 minute.
- Remove the cooked thepla from the pan and place it in a covered container or on a plate lined with a cloth to keep warm.
Step 4- Serve:
- Theplas are best enjoyed hot with yogurt, pickles, or a side of curry. They can also be eaten with tea or as a snack.
