1. Ingredients

For the Filling:

- 1 cup shredded cabbage

- 1 cup julienned carrots

- 1/2 cup thinly sliced bell peppers (any color)

- 1/2 cup thinly sliced mushrooms

- 1/2 cup bean sprouts (optional)

- 2 cloves garlic, minced

- 1 tablespoon fresh ginger, minced

- 2 tablespoons soy sauce

- 1 tablespoon hoisin sauce (optional)

- 1 teaspoon sesame oil

- 1 tablespoon vegetable oil (for stir-frying)

- Salt and pepper to taste

For the Spring Rolls:

- 12-15 spring roll wrappers

- A small bowl of water (to seal the wrappers)

For Frying:

- Vegetable oil (enough for deep frying)

2. Instructions

Step 1- Prepare the Filling:

- Heat the vegetable oil in a large skillet or wok over medium heat.

- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

- Add the shredded cabbage, carrots, bell peppers, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

- Add the bean sprouts if using.

- Stir in the soy sauce, hoisin sauce (if using), and sesame oil. Cook for an additional 1-2 minutes.

- Season with salt and pepper to taste.

- Remove from heat and let the filling cool slightly.

Step 2- Assemble the Spring Rolls:

- Lay a spring roll wrapper on a clean surface, with one corner pointing toward you (like a diamond shape).
