Roast Peanuts, roast 1 cup peanuts until golden and cool them. remove the skins.

Prep Ingredients, chop 2 green chilies and 1-inch ginger. gather 1 tsp tamarind pulp and salt.

Blend Chutney, blend roasted peanuts, chilies, ginger, tamarind, and water into a smooth paste.

Adjust Consistency, add water as needed to get your preferred thickness.

Add Tempering, heat 1 tbsp oil, splutter mustard seeds, curry leaves, and asafoetida, and pour over the chutney.

Serve, enjoy with dosa, idli, or paratha perfect for a cozy winter meal.
