Rinse and soak rice, wash 1 cup of rice, soak for 20 minutes, then drain.

Prepare vegetables, chop 1 cup of winter vegetables like carrots, peas, and potatoes.

Temper spices, heat oil, add cumin, bay leaves, cloves, cardamom, and cinnamon, and sauté until aromatic.

Saute aromatics, add chopped onion, ginger-garlic paste, and green chili paste, cook until golden.

Cook vegetables, add vegetables, turmeric, chili powder, and salt, saute for 5-7 minutes.

Add rice and water, mix in rice, add 2 cups of water, cover, and cook on low heat until done.

Garnish and serve, let it rest, garnish with coriander, and serve hot with curd or pickle.
