Here's how to make Kaju Katli at home in just 8 simple steps.
Grind the cashews, blend cashews into a fine powder using a dry mixer. do not over-blend, or it will become sticky.
Prepare the sugar syrup, in a pan, mix sugar and water and heat on a low flame. stir until the sugar dissolves completely.
Cook the cashew mixture, add the cashew powder to the sugar syrup. stir continuously on low heat to avoid lumps.
Check the consistency, after 7-10 minutes, the mixture thickens and starts leaving the sides of the pan. you can test by rolling a small portion into a soft ball with your fingers.
Knead the dough, transfer the mixture onto a greased surface. let it cool for 2-3 minutes, then knead it into a smooth dough using a little ghee.
Roll the dough, place the dough between two butter papers or greased parchment paper and roll it out evenly with a rolling pin.
Cut into diamonds, using a knife, cut the rolled dough into diamond-shaped pieces.
Decorate & serve, optionally, place silver varak on top for a traditional touch. let it set for 30 minutes before serving. enjoy your homemade Kaju Katli.
