Make the Batter, mix all purpose flour, cornflour, baking powder, and turmeric in a bowl. Gradually add water to make a thick, smooth batter. cover and let rest for 1 hour.
Prepare Sugar Syrup, boil sugar and water for 8-10 minutes until it reaches a single-thread consistency. add lemon juice and cardamom, then keep warm.
Heat the Oil, warm ghee or oil in a pan on medium heat, ensuring it’s hot but not smoking.
Pipe the Batter, put the batter in a piping bag with a small nozzle. carefully pipe spirals into the hot oil.
Fry and Soak, fry the jalebis until crispy and golden, then dip in warm sugar syrup for 15-20 seconds. serve warm and enjoy your crispy jalebis.
