Grate and prepare zucchini, grate zucchinis, sprinkle with salt, and let sit for 10 minutes. squeeze out excess water using a kitchen towel or your hands.

Mix ingredients, combine the squeezed zucchini with egg, flour, Parmesan, herbs, and seasonings in a bowl. stir until well mixed.

Heat the Pan, heat a non-stick skillet over medium heat with a little oil until it shimmers. scoop spoonfuls of the mixture into the pan, flatten slightly.

Cook pancakes, cook the pancakes for 3–4 minutes on each side until golden brown.

Serve and enjoy, transfer to a paper towel-lined plate to drain excess oil. serve warm with yogurt, sour cream, or a side salad.
