How to make chicken soup in 6 simple steps.

Prepare Ingredients, Gather chopped onions, carrots, celery, garlic, and chicken.
Sauté Vegetables, Heat oil or butter in a large pot. Add onions, carrots, celery, and garlic. Sauté until softened.
Add Chicken and Broth, Place the chicken pieces in the pot and pour in chicken broth about 4-6 cups Add bay leaves, salt, and pepper.
Simmer, Bring the soup to a boil, then reduce to a simmer. Cover and cook for 30-40 minutes, or until the chicken is tender and cooked through.
Shred Chicken, Remove the chicken from the soup, shred the meat, and discard the bones. Return the shredded chicken to the pot.
Final Seasoning, Taste the soup and adjust the seasoning. Optionally, add noodles or rice. Simmer for another 10-15 minutes, then serve hot.
