Prepare the ingredients, chop all vegetables and paneer into small cubes. soak cashews in warm water for 10 minutes, then blend into a smooth paste. puree tomato and keep it aside.

Cook the vegetables, boil the mixed vegetables until soft but firm. drain and keep aside. lightly saute the paneer cubes in ghee for a golden color.

Prepare the korma gravy, heat ghee or oil in a pan. add bay leaf, cinnamon, cardamoms, and cloves. add chopped onions and saute until golden brown. stir in ginger-garlic paste and cook until the raw smell disappears. pour in the tomato puree and cook until oil separates.

Add the cashew paste & spices, stir in the cashew paste, milk, and cream, mixing well. add turmeric, red chili powder, cumin powder, garam masala, and salt. let it simmer on low heat for 5 minutes until the gravy thickens.

Add vegetables & paneer, mix in the boiled vegetables and sauteed paneer. stir well and cook for another 3-4 minutes, allowing the flavors to blend.

Garnish with fruits & nuts and serve, sprinkle chopped nuts, raisins, diced pineapple, and pomegranate seeds for a royal touch. simmer for another minute to enhance the flavors.
